My Ma says she usually cooks this dish with salted fish bones but this time she uses salted fish fillet. It has been a long time I have not eaten this dish [since I got married years ago and almost forgotten about it]. Ingredients for this dish is very simple.
600 gm brinjal - scrape off skin and slice into uneven wedges [soak in water before frying]
1 piece [3"x3"] salted fish fillet/meat - wash and soak for 10 minutes, cut into 1 cm wide strips
1 tbsp chopped garlic
1/2 tbsp chilli paste
salt to taste
2 tbsp oil100 ml water
- Heat oil in wok [medium heat] to fry salted fish till fragrant. Push aside and add in chopped garlic and chill paste. Saute till fragrant, then add in brinjal [discard water use to soak brinjal]. Stir fry to combine ingredients well.
- Add in water, stir and cover to cook brinjal till soft. Add salt to taste. Dish out on plate to serve. Garnish with spring onions or coriander leaves
