Stir Fry Bittergourd With Chicken Innards

A simple dish with only 3 ingredients.


1 bittergourd  [about 250 gm]
1 small red carrot - sliced thin pieces with patterns
some chicken innards - wash, cut and blanched in hot water for 2-3 minutes. Wash and set aside.
1-2 tbsp oil
salt and chicken stock granules to taste
  1. Wash bittergourd, cut into half lengthwise.  Remove the seeds and white part with a spoon.  Slice thin slices slantly.
  2. Heat oil in wok, saute garlic till aromatic.  Add in bittergourd and carrots, fry and add in seasoning and some water.  Stir and cover to cook for 2 minutes till bittergourd is soft.  Remove cover and add in blanched chicken innards.  Fry for another minute.  Dish out on plate to serve with rice.
