A simple spicy pineapple stir fry that requires only few ingredients. This dish can be cooked if you have leftover pineapples that are not sweet to be eaten raw. You can substitute french beans with zuchini or cucumber [my original recipe uses zuchini]. With french beans it is also good as the french beans remained crunchy after frying. The natural flavour of the pineapple makes this dish sweet and sourish thus very appetising. If you feel like having pickled vegetables 'acar', this can be a substitute.
Ingredients
[serves 2-3]
1/4 of pineapple - cut strips
100 gm french beans - cut slantly about 1 inch length
some red carrot - cut thin strips
some shredded black fungus - optional
some shredded black fungus - optional
1 tbsp dried prawns - washed and chopped/pounded
1/2 tbsp oil
1 tbsp hot chilli sauce* to taste
1 tbsp tomato sauce* to taste
salt to taste toasted sesame seeds or grounded peanuts - optional
- Heat oil in wok, saute dried prawns until fragrant.
- Add in french beans, carrots and pineapple. Stir fry to combine.
- Add in chilli sauce and tomato sauce. Add salt to taste.
- Cover to steam cook vegetables for 1-2 minutes.
- Remove and dish out to serve with rice.
- Sprinkle sesame seeds and grounded peanuts before serving - optional
