Lemongrass Chicken in Tomato SauceVisit

Easy to cook fragrant sweet sour chicken dish.  Goes well with steaming hot rice.   Considered a quick stir fried aromatic dish.
The lemongrass aroma blends well with the sweet sour taste of tomato sauce.

Ingredients
[serves 3]
3 chicken thighs - deboned and cut into bite size pieces
- marinate with 1/2 tsp salt, 1 tsp light soy sauce, sesame oil and pepper and 1 tbsp cornstarch for 30 minutes
2 stalks lemongrass - crushed
1 red chilli - cut into pieces
1 green chilli - cut into pieces
1 tbsp chopped garlic
1 tbsp oil
Seasoning
4-5 tbsp tomato sauce
1 tbsp light soy sauce
1 tsp sugar
1/4 tsp salt
150 ml water
  1. Heat up oil and saute lemongrass until aromatic.  Add chicken and pan fry over high heat [or deep fried] until brown and fragrant.
  2. Add chopped garlic and stir fry until fragrant.
  3. Add remaining ingredients, seasoning and water.  Cook until the sauce has thickened.
  4. Dish up to serve.

Hi Kimmy,

I like your idea of adding lemongrass in this tomato chicken dish. It must be extra fragrant with this addition :D

Btw, regarding your ji dan gao question... I'm surprised to hear that because my cakes didn't shrink much after baking and in fact, I find baking this recipe so much easier than baking ogura cake. How about baking yours slightly longer and see if they are more stable with lesser liquid content?

Hi Zoe, I'll try the Baked Ji Dan Gao again. Taste wise is good but texture not as soft and moist as Ogura. Thanks.

Hi Ann, I love to prepare this kind of flavoursome dishes then I didn't have to cook other dishes. Just one meat and vegetable dish with rice makes a complete meal for the family.
