This recipe is adapted from Y-Tower Cooking You-tube Show. There are 4 different kinds of soup recipes
shared, in which I have selected 2 to try.
The first that I tried was Dried Mushroom Chicken Soup [yet to share the recipe] with some
modifications for simplicity and this is the second recipe which I tried
recently.
It is really simple with just 3 basic ingredients
[chicken, chai por and garlic]. The
portion [serves 2-3 persons] shown in the pictures is a reduced portion of the
original recipe which I am sharing below.
This simple, homey soup is awesome. It has the natural aroma and saltiness of the
preserved salted radish [cai por]. The
original recipe has some salt added which I have omitted as I find the
saltiness and sweetness suit me well. The chai por strips are no longer salty after boiling.

Ingredients
[serves 4-5]
500 gm free range chicken – cut into chunky pieces [blanched and rinsed]
100 gm chai por strips – rinse a few times [do not soak]
4-5 pips garlic with skin [keep whole]
1000 ml water
Seasoning
1 tbsp cooking wine [optional, to add last]
½ tsp salt [I omit]
Dash of msg
- Bring 600 ml water to boil in a soup pot, add in the chai por. Boil for about 10 minutes or until aromatic.
- Add in the garlic, chicken pieces and remaining water [400 ml]. Bring to boil again, then lower heat.
- Cover and simmer for 30 minutes or until chicken is cooked through. Remove scums, if any.
- Before dishing up, add in wine and seasoning to taste.
- Serve hot.
