Oven Baked Crispy Anchovies

Must thank Noob Cook [see link] for this lovely recipe on oven baked anchovies.  My family loves crispy fried anchovies but I always avoid frying anchovies unless really necessary. Now with this easy and healthy way, I wouldn't mind  preparing these crispy anchovies for many, many dishes that require fried anchovies.

Ingredients
100 gm anchovies - halved and remove all the innards and bones
  1. Place anchovies in a colander and rinse under running water several times [depends on the species, some are more salty than others].
  2. Drain dry and spread them in a baking tray line with parchment paper.
  3. Baked in preheated oven at 160-180 degrees C [depending on your own oven-temperature differs]] for 10-15 minutes.  Halfway through baking, toss and spread anchovies evenly to ensure even baking.
  4. Increase oven temperature to 180-200 [depending on your own oven-temperature differs] degrees C and bake for a further 5-10 minutes or until anchovies are golden brown and crispy.
  5. Serve immediately or cool completely before storing in an airtight container.

Hi Sapana, I was surprised the anchovies were very crispy and fragrant without the oil. The anchovies stayed crispy in the airtight container for up to 2 weeks.

Hi Cheah, my late FIL used to say, foods that are 'ho chiak' are never healthy and there are many people who say 'eat first otherwise what's the meaning of life'. hehehe!

Hi Alvin, yes it is and no oil is needed to get crispy anchovies.

Kimmy, this I must try! I just fried ikan bilis just now but I messed up and put it in the oven. Next time I will do this oven method instead.

Hi Phong Hong, I love crispy ikan bilis but the thought of frying them in oil, then throwing away the oil puts me off. Now, I can enjoy it with this method.

Hi Alice, that's exactly why. I don't like frying anchovies cos' I'll discard the oil after frying.

Hi Ah Tze, I loved fried anchovies. Just bought another batch to do. Taught my friend this way cos' her hubby is afraid of fried stuff but she doesn't seem to believe, hehehe!

Hi Anonymous, sorry to know about your failed attempt. But I have been using this method to baked anchovies. Perhaps your oven heat is a bit of different from mine. Maybe you can stick to just 180 degrees for 15-20 mins.

Hi Kimmy, I tried, but somehow my anchovies turned out to be very very hard to chew. 1. Is it has to do with the cooking temperature (I used air fryer toaster oven)? or 2. did I cook it too long (I didn't take it out immediately, I left it in the oven to cool down). Thank you.

Hi Anonymous, I think it could be the quality of anchovies that you baked. Some anchovies are hard whichever way they are fried and only used to cook with sambal. I am not sure how the airfryer toaster oven work but it is ok when I used the conventional oven.

Does anyone ever follow the recipe but without removing the head and innards? I'm lazy.
