Vegetarian Stir Fry Pumpkin

 
Always thought that stir fry pumpkin dish must have dried prawns or meat.  This time, I tried cooking pumpkin the vegetarian way with soy gluten and miso.
Verdict - very tasty dish, goes well with rice or porridge.  It's savoury sweet in taste.

Ingredients
600 gm pumpkin - cut small wedges
1 tbsp miso - mix with some water into a paste
dried soy gluten chunks [optional]
1 tbsp chopped ginger
2 dried chillies - cut sections
enough water to cover ingredients 
1 tbsp oil
Seasoning
1 tsp sesame oil
1 tbsp shaoxing wine
1 tsp salt to taste
dash of pepper
  1. Heat oil, saute chopped ginger until fragrant, add in soy bites then pumpkin, dried chillies and miso paste.
  2. Stir fry to mix ingredients well.  Add in enough water to cover the ingredients.  Bring to boil and add seasoning to taste.  
  3. Cover to cook pumpkins until soft and sauce has thicken.
  4. Drizzle in sesame oil and wine.  Dish up to serve.

Hi Kimmy, I also tried pumpkin with miso paste, really tasty!

Kimmy, this is another tasty pumpkin dish! I never thought of using miso.

Hi Ann, I used Miso cos' I didn't have fine taucheong and I was too lazy to chop the coarse ones. Really nice with the sweet pumpkins.

Hi Phong Hong, I suppose this dish would be tasty if dried prawns or meat are added [non-vegetarian version].

I never thought of using miso, I have always thought pumpkin must be fried with dried shrimps. This is really an innovatie way, thanks for sharing and linking with us!

Hi Eileen, there are many ways of cooking pumpkins. I wonder whether I would have enough time to cook them and share with LTU this month, hehehe!

Hi Miss B, I supposed this one is with the least ingredients. BTW, Chinese celery can be added too.
