Mixed Fresh Vegetables With Garlic Sauce

Serving this salad with Devil's Chicken and Tumeric Rice.  This salad can be prepared and kept in the fridge until ready to eat.  Refreshingly fresh and light.

2 zuchini - wash and shredded
some salad leaves - wash and cut thin shreds
1 tomato - seeded and cut strips
  • Cut all the vegetables and place in a colander to drip dry while you prepare the garlic sauce.

Garlic Sauce - Mix together 

2 tbsp minced garlic
3 tbsp mirin
3 tsp light soy sauce
2 tsp sesame oil
juice of 2 calamasi lime or 1 tbsp vinegar
salt and pepper to taste
some toasted sesame seed
  • In a mixing bowl, mix together all the garlic sauce ingredients.  Taste to adjust seasoning.  Garnish with a sprinkle of toasted sesame seeds.
  • Pour over prepared vegetables.  Toss to mix well and refrigerate until later use.
