Pickled Zuchini

A simple pickled zuchini, very crunchy that should goes well with rice and fried meat.
[serves 2]
200 - 250 gm zuchini - washed and sliced - sprinkle with some salt.  Mix and leave for awhile for the liquid to drain.  Rinse zuchini and squeezed out as much liquid as possible.  This is to make the zuchini crunchy.
Mix together
2 tbsp apple cider vinegar
2 tbsp sugar
a pinch of salt
  • Add mixture to zuchini.  Mix well and refrigerate for at least an hour before serving.   Discard the liquid before serving.
  • Add a small red chilli if you prefer a little spicy taste - optional.
