Wolfberries and Lotus Seed Porridge

Another easy porridge with just a few ingredients.  Can be vegetarian or non-vegetarian according to your preference.  Again, I substituted the vegetarian ham with some minced meat.
Tasty soft porridge with crunchy lotus seeds, fragrant mushrooms and sweet wolfberries [kei chi].  Comfort food for Sunday lunch.

Ingredients
[serves 3]
125 gm rice 
1.25 litre water
50 gm vegetarian ham [substitute with minced meat for non-vegetarian version]
2 dried mushrooms - soaked and cubed [can use fresh mushrooms]
1 small carrot - peeled and cubed
50 gm lotus seeds - soaked and remove the pith [can use fresh lotus seeds]
1 tbsp kei chi [wolfberries]
1-2 stalks coriander - cleaned and chopped
1 tbsp sesame oil
Seasoning
1 tsp vegetarian mushroom seasoning or 1/2 cube chicken stock granules [non-vegetarian]
Salt and pepper to taste
  1. Clean rice and soak in water for 30 minutes and drain [I didn't soak the rice].
  2. Place all the ingredients in a pot [except wolfberries].  Bring to boil, then lower heat to simmer for 1/2 hour or until porridge is smooth or cook until the consistency preferred.
  3. Stir in kei chi and add seasoning to taste.. 
  4. Dish up, garnish with chopped coriander leaves.  Serve hot.

Kimmy, this porridge is a lot more appetizing with many ingredients in it. I would be happy to have two bowls hah...hah...

Hi Kimmy,
Your porridge looks very good. I have never tried using lotus seeds for cooking porridge before. My family love eating porridge and have just made some yesterday too, for my kids' after school lunch.

In reply to your question on the marble cake, I've used a 7" round springform cake pan for half a recipe.

Hi Lite Home Bake, I agree it's healthy and comforting. I always thought porridge must have animal proteins to make it tasty, I'm very wrong.
