A simple stir fry vegetarian lady's finger [Okra] which I served with egg curry [see this post] and rice.
Ingredients
300 gm lady's fingers - washed, drained and cut into diagonal slices
3 shallots - peeled and sliced
3 cloves garlice - skinned and sliced
3 dried chillies - cut into 2 cm pieces - washed
1 tbsp cooking oil
1 tbsp vegetarian oyster sauce
1 tsp light soy sauce
a dash of pepper
1 tbsp water
- Heat oil in wok, fry shallots, garlic and dried chillies until slightly crisp.
- Add in cut vegetables. Stir fry to mix. Add in the sauces and water.
- Allow to cook for 1-2 minutes until vegetables turn dark green.
- Season with pepper and dish out to serve.

Kimmy, my mum did mention to me long ago to use dried chillies to fry ladies fingers. I think she did something like yours. I haven't eaten it yet so I must try!

This lady fingers look appetising. I can finish a plate all on its own.
Hi Cheah, sometimes I do crave for vegetables. Quick stir fry of this lady's fingers make it crunchy nice.
