Pineapple, Zuchini Salsa

When cooking for dinner, I sometimes prefer not to fry vegetables but instead will prepare a salad or salsa.  With salsa, I can use a variety of vegetables and even fruits in it.

Here is a simple Salsa recipe which I came across in some food blogs sometime ago.  Appetising, refreshing and light.
Ingredients [mix all together]
[serves 2-3]
1/4 pineapple - cut
1/2 zuchini - cut fine strips
1 big red onion - sliced thinly
1 small red chilli or chilli padi - cut
1/2 cup mint leaves - shredded

Seasoning [combine together]
3 tbsp lime juice
1 tbsp fish sauce
2 tbsp sugar
1/8 tsp salt
  • Prepare vegetables and fruits as above.  Mix all in a big bowl.
  • Pour in combined seasoning ingredients.  Toss well and transfer to a serving dish.  Cover with cling wrap and refrigerate until serving time.
