One of my cousin sister went for a body slimming course and she did slimmed down pretty much. Out of curiosity, I asked her what noodles is good for slimming diet. The answer is - glass noodles.
Since then I having been eating glass noodles regularly but I don't seem to trim down, hahaha! Looks like just this wouldn't work.
Ingredients
[serves 2-3]
100 gm glass noodles - soaked for 10 minutes, drain
50 gm prawns - shelled
100 gm chicken breast - shredded
2 dried mushrooms - soaked and shredded
50 gm carrots - shredded
100 gm China leeks - sliced slantwise
100 gm beansprouts - tailed
Garnishing - some sliced red chillies and crispy fried shallots
1 tbsp oil
Seasoning
1 tbsp each of oyster sauce, light soy sauce and sesame oil
dash of pepper and msg
1/2 tsp dark soy sauce
salt and sugar to taste
1/2 cup water
- Heat oil in a wok until hot. Add in chicken, prawns, mushrooms and carrots. Fry for a minute until aromatic.
- Add in seasoning and water. Bring to boil, then add in glass noodles, toss well and add in leeks and beansprouts.
- Cover to cook for 1-2 minutes. Remove cover and toss to mix ingredients well until gravy is almost dry.
- Dish up and serve immediately with garnishing.

hee..hee..hee..Kimmy, whether it works or not, I love to eat fried tanghoon. It's been so long since I fried some myself. I heard that glass noodles is lower in carbohydrates. Dunno true or not.
It's Shirataki noodles which has zero carbs!

Hi Kimmy, I'm going to cook this on Saturday when the kids are out. This portion is just nice for me and my hubby.
Hi Amy, the noodle portion is small but with the addition of other ingredients, it is a reasonable portion to fill the tummy. I like to add lots of vege in the noodles.
