CNY 2015 - Crispy Cashew Nuts Cookies

Made these with the fried cashew nuts which I bought from Bangkok.
These cookies are crispy, buttery and aromatic.   It's a keeper.
The original recipe is only 1/4 portion of this recipe.
Recipe Source - At Home With Amy Beh [ slightly modified]
Ingredients
[makes about 5 small bottles]
500 gm butter
250 gm castor sugar
2 tsp vanilla essence
2 whole eggs
600 gm self raising flour
4 tbsp rice flour
1 tsp salt
120-150 gm toasted finely ground cashew nuts
some cherry bits
  1. Cream butter, sugar and vanilla essence until light and creamy.
  2. Beat in the eggs one at a time until well combined.
  3. Fold in sifted flour and salt on lowest speed.
  4. Stir in ground cashew nuts.  Mix well into a soft dough. Chill in the fridge for about 15 minutes.
  5. Pipe into rossette using a noozle mould onto a baking tray lined with parchment paper.
  6. Top each with a small bit of cherry.
  7. Bake in preheated oven at 180 degrees C on middle rack for 15 minutes or until golden brown.
  8. Remove from oven and cool on wire rack before storing in airtight container.

500g of butter is a lot no? Is this different from the normal cashew nuts cookies where we usually find a piece of cashew nut on top of each cookie?

Kimmy, I would imagine that these cookies are fragrant and crunchy. This year I don't have mood to bake CNY cookies :(

Hi Veronica, honestly I don't keep cookies in the house. All are for my mum, siblings, MIL and close relatives cos' I don't celebrate CNY is my house. My CNY is at my MIL's place, when I'm back home, CNY is almost over.

Hi Phong Hong, I suffered the same mood last year but I have to walk out of that mood this year cos' I'm the 'main supplier' of home-made cookies for too many families. Oh yes, these cookies are buttery, fragrant and melt-in the mouth type.

Hi Victoria, frankly speaking, last year I had bookmarked many cookies recipes shared by blogger friends but didn't make any cos' I didn't celebrate CNY 2014 when my youngest brother passed away suddenly on Christmas Day 2013. So this year, I'm trying to clear as many as possible from my must do list. I made several which turned out good and I'll be recording them in this blog.

Sorry to know about your brother. Glad that you have moved on while keeping some sweet memories that holds you dearly.
I have just a few CNY cookies to bake but haven't started leh :(

It's okay Karen. The mood of baking cookies these years after my dear Papa and brother's passing [within a duration of 2-3 years] have been very different. Really brings back lots of memories. My Papa used to tell me what cookies to bake and who to give. He remembered all his relatives preference and comments about my cookies. He was the one who always cleaned the cookie jars/containers and kept them for me after CNY to be used later. A very considerate, loving Papa. Missed him terribly.

Hi Joyce, have to start earlier cos' I'm baking quite big portions and varieties for giveaways. Moreover, I have other chores and finalising accounts for tax submission to do asap.My hands are full till after the CNY.

Cashew nuts are my favourite nuts. I have ever tried some cashew nuts cookies but not the piping type of cookies. I may give this a try if I have the time. Thanks so much for sharing.

Hi Miss B, this is simple like making peanut cookies. The difference is that it uses butter and is piped for better looks, hehehe! Do try if you have the time.
