FRIED CHICKEN WITH FISH SAUCE

I have picked another cookbook from Yum Yum Publications for this month's Cookbook Countdown Event#15. The chosen recipes from this book are very easy and simple, yet they are awesome. 
The flavours are quite unusual with the fragrance of fish sauce and made spicy with a good quality sweet chilli sauce.  I loved this dish.  The chicken wings are succulent and well coated with the thick sauce.  It's finger licking good. 

This is an authentic and delicious Vietnamese fried chicken aka canh ga chien nuoc mam.  It can be a good party dish serve with a spread of fresh salad.

Recipe adapted from Yum Yum Magazine No. 95
Ingredients
[serves 3]
6 chicken wings - tip removed and cut into drumettes and wingettes
1 tsp salt + 1/2 tsp pepper
Seasoning [combine]
1 tbsp each of  fish sauce and sweet chilli sauce
1 tsp sugar
3 tbsp water

  1. Mix chicken wings with salt and pepper.  Season for at least 30 minutes.
  2. Heat up a non stick pan with 1 tbsp oil, pan fry chicken pieces in batches until golden brown. Dish up. Pour out excess oil.  You can also deep fry the chicken pieces.
  3. Bring combined seasoning sauce to boil until bubbly.  Returned the fried chicken pieces to wok, toss well and boil until sauce is almost dry.
  4. Dish up to serve immediately.

Kimmy, that looks delicious! I haven't made chicken wings for a while. Can try this out over the weekend.

wow, that sure looks delicious! I can see the chicken pieces are coated with all that thick lovely gravy!

Hi Chloe, do try this and perhaps you can used other parts of the chicken like deboned chicken whole legs, drumsticks etc. as I find chicken wings a little more oily and does not brown evenly when pan fried. But the seasoning sauce is awesome.

Hi Joyce, yep, delicious chicken wings but I would prefer deboned chicken whole legs. Why? Because I only eat drumlets and not wingnettes [too much fats, rather sinful]. Okay for the young people.
