Braised Bitter Gourd With Chicken

Tasty, easy, homely dish that is good with rice or porridge.  My mother in-law used to cook this dish but I always avoid eating it dish, thinking that the bitter gourd is bitter and the meat could be bitter too.  But, I know I was wrong after cooking this dish.
This dish tasted good, the chicken meat and bitter gourd aren't that bitter as I thought.
The original recipe uses chicken thighs but with chicken wings is as good. Tips - To prevent the bitter gourd from been too bitter, scrap off the inner white pith clean.
This dish is savoury, slight bitterness that complements well with the sweetness of the chicken meat and sauce.

Ingredients
½ bittergourd [about 200 gm] – seeded and white pith removed, cut into thick strips
50 gm carrot – cut thick strips
10 slices of ginger
3 chicken wings – cut into bite size pieces or use chicken thigh
200 ml water
Oil for frying
Seasoning
1 tsp sugar
1 tsp light soy sauce
1 tbsp oyster sauce
1 tsp shaoxing wine
1 tbsp fermented black beans – rinsed or fermented soy beans [taucheong]
  1. Heat some oil in a non-stick pan, sauté bitter gourd and carrots for several minutes. Dish up.
  2. Using the same wok, pan fry chicken wings until brown. Push aside. Add in ginger to fry until fragrant, then add in fermented black beans. Stir fry to mix.
  3. Add in the seasoning and return the bitter gourd to wok.
  4. Stir fry to mix well. Add in water, bring to boil, taste to adjust seasoning.
  5. Simmer until chicken and bittergourd are tender and sauce is thick.
  6. Dish up to serve with rice or porridge.

Kimmy, I first tasted this dish at the chap fan stall. From then on I became a fan. I used to cook it at home using the Lee Kum Kee black bean sauce. But that sauce has since disappeared from the supermarket. Since then I have not cooked this delicious dish. Maybe I should use fermented black beans like you did.

Hi Kimmy, I love this dish esp with fermented black bean sauce.:) Some hawkers cooked this with hor fun and it is yummy :) Was told that bitter gourd is good for health too esp,the small type which is very bitter. The Indians fried it with some spices till crispy and it is delicious with a little bit of bitterness.

Hi Phong Hong, yes you must try using the fermented black beans that comes in a small packet which is less than RM1. It can be used to cook other delicious dishes like fried tofu or beancurd. All very yummy with some cili padi, etc.

Hi Madeline, I have not come across this with hor fun. I started to love eating bittergourd with a bit of bitterness. Frying it with eggs and dried prawns, it's yummy too with rice or porridge.

We love bitter gourd anyway it is cooked! Using fermented black beans is one of our favourites! Looks delicious!
