Eight Treasure Tonic Soup

A tasty, delicious soup that is not difficult to cook at all.  Most of the ingredients are easily available in the house.
Verdict - A tasty soup with 8 ingredients and the quantity required can be estimated according to own preference.
Recipe Source - Yum Yum Magazine No. 89 [slightly modified the quantity]
[serves 4-5]
1 chicken whole leg or 2 chicken thigh - cut into pieces - blanch in hot water, drain
3 chicken feet [I omit] - blanch in hot water, drain
1500 ml  water
70 gm peanuts - soak until soft
30 gm soy beans - soak until soft
1 small piece preserved turnip [da tou cai] - sliced and soaked
3-4 dried mussels - washed and soaked for 10 minutes, drain
10 seedless red dates
1 flower white fungus - soaked
1 small carrot - peeled and sliced or cut into chunks
1 tbsp medlar seeds [goji]
salt and pepper to taste
  1. Bring water to boil.  Add in all the ingredients except chicken, carrot and goji.  Return to boil, then lower heat to simmer for about 15 minutes or until nuts and beans are soft.
  2. Add in chicken and carrots, simmer until ingredients are cooked.
  3. Lastly add in goji and seasoning to taste.
  4. Serve hot.

Kimmy, I am quite excited to try this soup. I happen to have peanuts and soya beans in the house. But I don't have dried mussels. I reckon it will still taste good without it, hopefully!

Hi Phong Hong,the dried mussels do enhance the flavour of this soup. Perhaps, it can be substituted with a small piece of dried cuttlefish. Previously, I never like adding dried cuttlefish or mussels to soups but now I realised the soup tasted much better with it.

Hi Kimmy, occasionally I boil similar soup .... but I didn't add dried mussels (ho see) to it. I know yours very tasty !

Hi Karen, really a tasty and nutritious soup. I like the white fungus and the beans more than the chicken.

Hi Mui Mui, I had this soup with a big plate of stir fry leafy greens. This makes a complete meal. Fuss free meals for busy days.

Hi Diana, you're right. A bowl of steaming hot soup for dinner after a hard day's work is most welcome dish. Moreover, soups can be prepared well ahead of meal time just need reheating before dinner.

This is such a nutritious and delicious looking soup! I seldom use dried mussels in soups. I like dried cuttlefish though!
