CNY 2015 - Cocoa Bubble Rice Cookies 泡泡米曲奇

First time baking cookies with bubble rice after seeing them in Ann and DG's blog.
No regrets giving it a try as these cookies turned out very crispy, crunchy and I like the choc chips in it.  Not sweet at all too.  I used the cocoa flavour bubble rice.
As usual, these are for giveaways, the quantity here is double portion of the original recipe.

Ingredients
Makes 185 pieces [double portion]
260 gm butter
120 gm castor sugar
2 large eggs
2 tsp vanilla extract
340 gm plain flour
1 tsp baking soda
1/4 tsp salt
160 gm rice bubbles (crispy rice)
140 gm chocolate chips




  1. Cream butter and sugar till white and fluffy.
  2. Add in eggs one at a time and vanilla extract, beat well.
  3. Sift in flour, baking soda and salt and continue to mix well over low speed.
  4. Lastly pour in crispy rice and chocolate chips, fold well with a rubber spatula.
  5. Scoop chocolate mixture with a dessert spoon and drop onto a lined baking tray.
  6. Bake at preheated oven at 160 degrees C for about 20 minutes or until golden crisp.
  7. Cool down cookies and store in an airtight container.

do u need another neighbor? Cos I need one like you where I can get endless supply of cookies.. Saves me the trouble for fretting over empty cookie jars... This will be another addictive bite with the surprise crunch in the middle

Kimmy, you are really full of energy to bake so many types of cookies! This one I will also like because of the chocolate flavour and also because I like bubble rice.

Hi Victoria, I baked the German cookies for my neighbour cos' she was really fretting for a good cookie recipe and ended up with very 'hard' cookies. I didn't bake this bubble rice cookies for her due to time constraint. I sure like to be your neighbour cos' you are a very creative baker, hehehe!.

Hi Amy, do try to bake this cookies. You will love it cos' it is so easy to make yet the outcome is good. Very crunchy cookies and I love the choc chips in it.

Hi Phong Hong, yes I had used up lots of energy making cookies. Now I am finished with this chore and started another, that is to prepare my brother's company accounts for submission.... then is time for my MIL during CNY. After that is holiday to de-stress.

I haven't seen any shop selling cocoa flavor bubble rice around here.Yours look tempting,gotta find the bubble rice somehow :)

Hi Cheryl, actually the baking items outlet sells 2 types of bubble rice [plain and cocoa]. Same price, I choose cocoa just to share this post with LTU Cocoa theme event, hehehe! These cookies are crunchy and crispy with the choc chips, they are good.

Hi Fion, not many stores selling this. I happened to see it in a newly opened store selling baking items near the vicinity of my house. It's cheap too.
