FRIED CHICKEN IN BLACK VINEGAR SAUCE

This is a fragrant, sweet and sourish chicken dish that is easy to prepare yet delicious served with piping hot rice. The original recipe uses deep frying method but I pan fried the marinated chicken pieces then braised them with the vinegar sauce.
It is much easier to cook it this way and less oil is needed especially when I used a non-stick wok.
Recipe adapted from Yum Yum Magazine No. 67 [with slight modifications]
Ingredients
[serves 3]
300 gm chicken thighs – cut bite size pieces 
6 pieces tofu puffs [optional]
Marinade
¼ tsp salt
½ tsp sesame oil
Dash of pepper
1 ½ tbsp cornstarch + 1 tbsp water
Sauce [Combine]
1 tbsp brown sugar
2 tbsp light soy sauce
4 tbsp black vinegar
150 ml water 
  1. Marinate chicken pieces with marinade for at least 30 minutes.
  2. Heat 1 tbsp oil in non-stick wok, pan fry marinated chicken pieces until golden brown, add in tofu puffs. 
  3. Pour in the sauce ingredients. Bring to boil and taste to adjust seasoning. 
  4. Lower heat and simmer for about 15-20 minutes until chicken and tofu puffs are tender and sauce reduced slightly.
  5. Dish up to serve.

This dish must be very yummy. I love the taste of black vinegar in meat dishes. Bet you don't have any leftover, Kimmy.

Hi Veronica, the black vinegar sauce is good not only for chicken but it good for pork and tofu too. You are right, now leftovers, not even the gravy....hehehe!

Dear Kimmy,

May I ask what brand of black vinegar do you used in this recipe? same for sesame oil and fish sauce what brand do you used?

Once I get hold of black vinegar, I want to try this recipe, love the taste of vinegar very much. betw is the taste of the vinegar sauce strong for kids?

Hi Lynn, the black vinegar is 'Cheong Chan' brand [available at most supermarkets] and both sesame seed oil and fish sauce are from Lam Soon [Knife brand]. The sauce is sweet sourish, not too strong for kids. You can cook a little longer for the sauce to reduce further too but I like the sauce over rice. It is very appetising.

Kimmy, this is another tasty dish that will have me topping up my rice! I am very fond of dishes that contain vinegar. Anything sourish, sweetish and saltish is good with me.

Hi Kimmy, i cheong to NTUC but couldnt find this brand. Anyway got hold of 1 black vinegar.. no sugar added. I will try it tonight for dinner. Thks for the recipe.

Hi Lynn, just add a little more sugar if it is too sour. Suggest you taste the vinegar first before adding the actual quantity in this recipe.

Hi Phong Hong, I was told that vinegar is good for our digestive system. My SIL adds black vinegar to almost any food she eats [esp. soups and noodles]. This dish is yummylicious.
