CNY 2017 - WALNUT CHOCOLATE COOKIES

If you have been following my recent posts on cookies, you will notice that most of them are from Yum Yum Magazines.  This I have to say a word of thanks to my sister in-law.  She has a collection of the magazines.  When I told her that I wish to bake  some new cookies for this CNY, she generously lend me a number of  her magazines with cookie recipes.  This recipe is one of the many selected recipes from  them.
These chocolate walnut cookies are aromatic, crispy and crunchy but it spreads a little making it looks flattened.  However, these are good.
Recipe adapted from Yum Yum Magazine No. 93 with modifications
Ingredients
[makes 140 pieces]
250 gm butter – room temperature
75 gm castor sugar
75 gm brown sugar
1 large egg
2 tsp vanilla essence
400 gm plain flour
40 gm cocoa powder
1 tsp baking soda
½  tsp salt
80 gm toasted walnuts – chopped
150 gm chocolate buttons
  1. Cream butter and sugar until light, beat in the eggs and vanilla essence.  Beat until light and fluffy.
  2. Fold in the sifted flour, cocoa powder, baking soda and salt.  Mix well, add in walnuts and mix into a soft dough.
  3. Spoon batter onto a lined baking tray and place a chocolate button on top as decoration.
  4. Bake in a preheated oven at 180 degrees C for 15-20 minutes or until cooked.
  5. Remove and leave to cool on wire rack before storing in an airtight container.

  6. Hi Aunty Young, if I know that this cookie dough spreads so much, I would have made them smaller. These are very crispy and crunchy with the walnuts in it.
