This is one simple recipe which I picked to cook for my family during busy days. It turned out to be so good that I have
bookmarked to cook again when we go back to my mother in-law’s house for
Chinese New Year holidays.
It is always good to have a collection of easy to cook
and simple recipes during this time as I
have to cook numerous dishes for a big group for several days. This recipe requires only 2 main ingredients –
chicken meat and chives, yet it tastes awesome.
I only need to increase the portion according to the number of people to
serve.
Recipe adapted from Yum Yum Magazine No.95 with
modifications
Ingredients
[serves 2-3]
1 large deboned chicken whole leg with skin, fats removed
– cut into pieces
50 gm chives – diced
1 tbsp oil
Marinade
½ tsp salt, dash of pepper
1 tbsp cornstarch before frying
Seasoning [combined]
1 tbsp fish sauce
1 tsp sugar
2 tbsp water
- Mix chicken with marinade and season for at least 30 minutes. Coat chicken pieces with cornstarch before frying.
- Heat oil in a non stick pan, pan fry chicken pieces until golden brown on both sides. Remove excess oil if any, then add in seasoning and chives.
- Stir well and dish up to serve.

Kimmy, I cannot imagine what it is like to cook for a big group of people for a few days. I salute you! This dish I will definitely try because I have chives growing in my garden.
ReplyDeleteHi Phong Hong, this is one reason I don't really like CNY after I got married cos' I have to face these chores since then. My MIL expects me to do whatever she isn't going to do and there is no others willing to do. They can avoid it cos' they aren't staying with her and I don't like to see my MIL showing her tantrums during festive times. Elders are always right eventhough they are not. Back to this dish - I love it for its taste.

ReplyDeleteHi Emily, it was my late Papa. He was my role model - a filial son, caring, loving father and husband to his children and wife. A very considerate, emphatic man who puts other peoples well being before his. I suppose I have inherited his traits. BTW, this is a delicious and tasty dish.
ReplyDeleteDelicious dish, Kimmy! Similar to the dish I sometimes cook, I used oyster sauce instead of fish sauce, and usually spring onions from my garden. I have a pot of chives growing, and will try it with chives the next time.
ReplyDeleteHi Joyce, usually I used oyster sauce, ginger and spring onions too, but with fish sauce, the aroma and flavour is quite different. Nice dish, just that I should have added more chives.

ReplyDeleteHi Kayte, yes your description of this dish is correct - moist and delicious is how I found this dish to be. I wouldn't mind cooking this often cos' it can be served with rice or porridge.
