Going 'nuts' cooking various vegetarian dish for the past nine days. Yesterday was the last day of my vegetarian diet. Vegetarian food aren't that bad, I mean real vegetarian food minus the processed ingredients. There are some more postings on vegetarian dishes coming.
This dish is simple with only 3 main ingredients and the herbs. It looks a bit dark cos' I think I have put in too much sook tei. The photos didn't look good cos' I used my new HP to take the shots in the dark. Was in a rush to pack this dish and forgotten to dish up to take some shots. This is tasty dish.
Recipe Source - Amy Beh Book 3 with modifications [half original recipe]
Ingredients
Herbs and Spices [put all in a spice bag]
7 gm tong kwai
7 gm chuen koong
5 slices liquorice
5 gm sook tei
1/2 tbsp Szechuan peppercorns [fah chiew]
1/2 tsp white peppercorns - lightly mashed
3 cm piece cinnamon stick
4 star anise
10 cloves
1 small tangerine peel
Seasoning
1 tbsp vegetarian oyster sauce
60 ml light soy sauce
1/2 tbsp vegetarian msg
1/2 tsp salt to taste
30 gm rock sugar
35 gm caster sugar
1 can braised peanuts - drain away the sauce
2 pieces fried firm beancurd - quartered [I used square tofu puff]
6-8 pieces vegetarian seafood fried tofu
1 litre water
- Put all the herbs and spices in a muslim bag and tie up neatly.
- Bring water to boil, add in spice bag and seasoning. Simmer for 30 minutes until soup is aromatic.
- Add in braised peanuts, fried beancurd and seafood tofu. Cook for another 15 minutes to allow the tofu to steep in the herbal stock.
- Discard spice bag, dish up to serve.

Hi Kimmy, you are right. If I go for vegetarian foods, I also go for real and original vegetarian food and not the processed ones. The herbal beancurd and peanuts is healthy and such a comfort food too. Would love to have a bowl right now! Thanks for sharing and regards :)
ReplyDeleteHi Ivy, my hubby for one is a No-No for processed vegetarian food. He says it is eating poison. Was telling him that there are many more vegetarian dishes I haven't the time to cook for this season. Have a great weekend ahead.
ReplyDeleteKimmy, you are right. If eating vegetarian food, go for the natural food and not processed ones. I have this Amy Beh book and I might have seen the recipe. I know it is delicious. Two bowls of rice, no problem!

Hi Louise, many ppl still do shy away from vegetarian food but we find them quite appetising. When on vegetarian diet especially when I cooked curry, I have to cook double portion of rice.
ReplyDeleteKimmy, you are really very hardworking, cooking so many delicious food for your hb even when you are on a vegetarian diet. When I am on vege diet, I usually cook the same 3 dishes.........vegetables cooked with lam yee(chai choy), vegetarian goose and vegetarian curry. For the vegetarian curry, I use store bought spices, put in long beans, brinjals, tau pok and evaporated milk and that is my curry. I find all sorts of short cut ways to cook.
ReplyDeleteHi Mettateoh, when on vegetarian diet, I usually cooked at least 3 different dishes for about 10 people enough for 2 meals. I don't repeat the dishes cos' there are many varieties to cook. There are some more postings on vegetarian dishes that I will be posting. Many people around me are lucky to try these dishes.

Hi Joyce, I love to try various methods of cooking, different food and taste. Keeping in mind it must be healthy too. I don't like eating the food prepared the same way and tastes on a routine basis.
