Seaweed and Pork Ribs Soup

Not that difficult to prepare this soup and is said to be beneficial for those having constipation problems.  Soup is tasty and goes well with just plain white rice.
Ingredients
[serves 2-3]
250 gm meaty pork ribs - cut in pieces, blanched in boiling water for a few minutes and rinsed
1 small white carrot - skinned and cut into wedges
1 small red carrot - skinned and cut into wedges
1 piece seaweed [aka hai tai] - rinsed, soaked and cut into 3 cm lengths
700 ml water
1/2 cube of chicken stock granules
1/2 tsp salt to taste
pepper to taste
  1. Put both carrots and pork ribs into a pot.  Bring to boil, then lower fire and simmer for an hour or until pork ribs are tender.  
  2. Add in seaweed and boil for another 10-15 minutes.  Add seasoning to taste.
  3. Serve soup hot with rice.
