The original recipe is actually Tomato Curry Prawns. I had to change it to fish as my hubby does
not fancy prawns.
Recipe adapted from Yum Yum Magazine No. 102 with
modifications
Ingredients
200 gm fish fillet – cut thick slices
1 onion – peeled and sliced
1-2 tomatoes – sliced
Some diced red chillies and spring onions
2 tbsp tomato sauce
1 tbsp fish curry powder
100 ml water
Seasoning
¼ tbsp sugar
¼ tsp salt
½ tsp light soy sauce
- Lightly coat fish fillet with some cornstarch. Heat up some oil to pan fry fish pieces until golden brown, dish up.
- Using the same wok with about 1 tbsp oil, sauté onions until aromatic, add in curry powder, tomatoes and cook over low heat. Add in tomato sauce, seasoning and water. Bring to boil and stir until sauce is thick.
- Return fried fish to wok, toss well then add in the chopped chillies and spring onions.
- Dish up to serve immediately.

ReplyDeleteHi Phong Hong, so my hubby has a supporter now. I do love prawns but for his sake, I have to use fish. Next time when he is out of town, I cook this dish with prawns, hehehe!
ReplyDeleteHi Kimmy, I cooked this dish last night for my family. While I didn't eat any of it(myself being a vegan), judging from the fact that there was no left-over, it must be pretty delicious. Thanks for sharing. I do love Yum Yum cookbooks but I don't have this issue.

I love Yum Yum cookbook recipes too, but most times, I will pick the simple ones. Will do the others when I have more free time to spare. Glad that most of them turned out good.

ReplyDeleteHi Tea Lady, with fish it is good with an extra curry flavour. One day I'll cook this again with big prawns just for myself, hehehe! My hubby doesn't fancy prawns.
