Fried Fish with Lum Chut

Lum Chut is a Peranakan style dipping sauce for grilled or fried fish. This dipping sauce is sourish, sweet, a little spicy and aromatic which is very appetising.  Simply good to serve with any grilled or fried fish.
I prepared this sauce to serve with fried Ikan Senangin. The original recipe uses this Lum Chut sauce for grilled Mackerel or Kembung fish but with this fried fish, it is as yummy-licious.

Ingredients
2 whole hard-tail Mackerel or Kembung fish [I used Ikan Senangin]
Oil for frying
Lum Chut Dipping Sauce
50 gm [5] shallots – sliced thinly
1 tbsp sugar to taste
10 gm belacan – toasted
1 tbsp sambal belacan
1 tbsp light soy sauce
50 gm [5] small calamansi limes – juiced
  1. To make the Lum Chut Sauce – combine all the sauce ingredients in a bowl. Blend with a fork until sugar dissolves and sauce is smooth. Set aside.
  2. Heat oil in wok, pan fry fish until golden brown or cooked through.
  3. Serve immediately with Lum Chut Dipping Sauce.

  1. the words lum chut brought me here because i hv never heard of this... truly, although a pure bred singaporean, there's just too many things about our asian culture i don't know and your blog just expose me so much into these interesting cuisines.. thank you so much... it's so great coming to know your blog

  2. Hi Victoria, not a problem. I think there are many, many people [esp. the young generations] in Malaysia and Singapore may not know what it is Lam Chut. But this dipping sauce is surely a good sauce to serve with grilled or fried fish. Moreover, it is so easy to prepare. Learning is a never ending journey for all of us.

  6. Hi Joyce, my mum used to prepare this dipping sauce to serve with fried kembung fish and I seldom eat it cos' it tastes different every time. Now with this recipe, I will prepare my own more often cos' the taste is nice.

  7. My mom makes dark sweet soy sauce with lam chut. We fire grill eggplant. Also sting ray fish steamed or grilled. These 2 dishes go well with this sauce.
