A very simple cooked potato and vegetable salad that goes well with roasted chicken or other fried/stewed/braised meats [Pork Chop with Gula Melaka Sauce].
Ingredients
3 large potatoes - peeled and cut into wedges
1 carrot - peeled and cut wedges
1 broccoli - cut into florets
1 canned large button mushrooms - halved [you can use fresh button mushrooms]
a dollop of butter
- Put carrots and potatoes in a pot to boil with some water [just enough to cover ingredients] until soft.
- Add in the mushrooms and broccoli. Stir to mix well or until broccoli is cooked.
- Add in butter, salt and pepper to taste.
- Stir to mix well and dish up to serve with roasted chicken or meat.

ReplyDeleteHi Joyce, this salad is good cos' I ate mostly the vege and mushrooms. Other have to finish the potatoes, the butter gave a nice aroma.
ReplyDeleteHi Zoe, I'm on low carbo recently cos' of borderline blood sugar. This meal is good as I can enjoy and have lots of veggies and less potatoes.
