Mixed Potato and Vegetable Salad

 
A very simple cooked potato and vegetable salad that goes well with roasted chicken or other fried/stewed/braised meats [Pork Chop with Gula Melaka Sauce].
Verdict - smooth, buttery, savoury potatoes and vegetable salad which can be eaten on its'  own.
 
Ingredients
3 large potatoes - peeled and cut into wedges
1 carrot - peeled and cut wedges
1 broccoli - cut into florets
1 canned large button mushrooms - halved [you can use fresh button mushrooms]
a dollop of butter
salt and pepper to taste [can also use freshly ground black pepper]
  1. Put carrots and potatoes in a pot to boil with some water [just enough to cover ingredients] until soft.
  2. Add in the mushrooms and broccoli.  Stir to mix well or until broccoli is cooked.
  3. Add in butter, salt and pepper to taste.
  4. Stir to mix well and dish up to serve with roasted chicken or meat.

    We like to eat roast chicken with potato and salad too. I see that yours is the super healthy combo kind with lots of vege and potatoes.

  5. Hi Joyce, this salad is good cos' I ate mostly the vege and mushrooms. Other have to finish the potatoes, the butter gave a nice aroma.

  6. Hi Zoe, I'm on low carbo recently cos' of borderline blood sugar. This meal is good as I can enjoy and have lots of veggies and less potatoes.
