EZ ABC Soup

Another soup recipe from Agnes's Chan latest book 'Let's Eat'.  The original recipe uses chicken whole legs [skin removed, cut to bite size pieces], but I used pork ribs.   This  soup is tasty and a little tangy with the tomatoes.
Ingredients
[serves 3-4]
300 gm meaty pork ribs
1  potato - peeled and cut into wedges
1/2 carrot - peeled and cut into wedges
1 onion - peeled  and quartered
1/2 tsp peppercorns - slightly crushed
800 ml water
1 tomato - cut into pieces
some spring onions - chopped for garnishing
salt to taste
  1. Blanch pork ribs in boiling water for several minutes to remove scums.  Rinse well.
  2. Bring water to boil in a soup pot, add in pork ribs and peppercorns, then simmer for 20-25 minutes until tender.
  3. Add in carrots, potatoes and onions, simmer until potatoes and pork ribs are soft.
  4. Lastly add in tomatoes and salt to taste.   Cook a further 5-10 minutes.
  5. Dish out to serve hot.  Sprinkle with spring onions or coriander leaves.

  1. Kimmy, I wonder why this type of soup is called ABC soup. Maybe because it is easy like ABC? Hee..hee...I feel like cooking it this weekend. Saves a lot of trouble :)

  2. Hi Phong Hong, just dump all the ingredients in the pot to cook. You get boiling hot soup for dinner on a cold evening [Rains almost all evenings when I cooked this soup].

  3. Ya, why is it called ABC soup....I too wonder. I make this at least once a week, sometimes will add some celery sticks and corn.

    Each time I go to Popular (and I just went yesterday!), I would flip thru this book!
    This is a lovely soup, perfect for a rainy day or even on hot days when all we want is some delicious soup!

  6. Good nutritious soup, my children loves this. This soup is called ABC cos it has vitamin A,B and C in it. :)
