Steamed Fish Head with D.O.M.

This fish head [thread fin fish] is from the same fish which I used to prepare Steamed Fish Fillet with Rice Vermicelli  [see post].

Here, I used a very simple sauce [including liquer] to steam the fish.  The sauce has a strong sweet taste of D.O.M liquer.
Ingredients
1 fish head - halved
some shredded ginger
some spring onions and red chilli for garnishing
Steaming Sauce - mix together
1-2 tbsp of D.O.M. liquer [depending on size of fish head]
1/2 tbsp each of light soy sauce and oyster sauce
1/2 tsp chicken stock granules or msg
1 tbsp sesame oil
  1. Place fish head in a steaming plate or flat bowl.
  2. Pour in steaming sauce and sprinkle some shredded ginger.
  3. Bring water to boil and steam fish for 8-10 minutes [depending on size of fish head] or until cooked through.
  4. Off fire and garnish with spring onions and chilli.
  5. Serve immediately.

  1. Wow, that's 'tipsy' fish, Kimmy. Good idea to add in DOM!

  2. Hi Cheah, I don't drink liquor, so this is one way I can finish off my DOM through cooking. There is a list of recipes that uses D.O.M which I'll be cooking.

  3. Kimmy, heh..heh..I think I have a bottle of DOM somewhere in the house. I don't drink so now I can use it to steam fish. Looking forwards to your dishes using DOM. By the way, I tried your Mango Yogurt Souffle Cake last weekend and it was fantastic. Will put in on a post soon.

  5. Hi Phong Hong, not a problem. Very happy that you did get a fantastic mango yoghurt cottony cake. So the recipe and method is workable, then. Do try others...that's what I'll be doing too, only constraint is 'time'. hahaha!
