Oriental Style BBQ Spare Ribs

Finally got to try out this lovely dish, BBQ Spare Ribs shared by Cheah of No Frills [recipe here].  It's easy to prepare, yet tasty and good.  Really yummy!!!   My hubby's first comment was 'Oh, this is good!, even the restaurants don't serve spare ribs as good as this.  Can imagine how good I felt?   Worth the trouble cooking at home.
I only bought 600 gm spare ribs and had to adjust the seasoning a little otherwise please refer to the original recipe.

Ingredients
600 gm spare ribs- cut into 4 inch lengths
4 pips garlic- pressed
4  tbsp light soya sauce
40 gm palm sugar - break into small pieces
Shaoxing wine to drizzle
some cornflour water for  thickening
tomato slices and lettuce leaves
  1. Marinate the spare ribs with the light soya sauce and palm sugar for at least 2 hours [I refrigerate overnight].
  2. Put the marinated spare ribs in a sauce pot and  add water just enough to cover the ribs.    Bring to a boil, cover and simmer on low fire until ribs are tender but still has a bite.
  3. Taste to adjust seasoning.  Place ribs on a foil lined baking tray and grill for 2 minutes on each side [I grilled on top shelf at 250 degrees C].
  4. Meanwhile, thicken the sauce with the cornflour mixture to desired consistency, turn off heat and drizzle on some Shaoxing wine.
  5. Arrange lettuce leaves on serving plate, top with grilled spare ribs, then ladle on the thickened sauce.  Garnished with sliced tomatoes [or zuchini slices if preferred].  I served with more lettuce cos' I didn't cook any other vegetable dish.
  6. Serve immediately. 
Note
Was so eager to savour this dish that I didn't really concentrate on taking nicer shots of it.  Doesn't matter about the pictures, we loved this spare ribs - so tender, flavourful and not oily too.
