Stir Fry Brinjal With Salted Fish

My Ma says she usually cooks this dish with salted fish bones but this time she uses salted fish fillet.  It has been a long time I have not eaten this dish [since I got married years ago and almost forgotten about it].  Ingredients for this dish is very simple.


Ingredients
600 gm brinjal - scrape off skin and slice into uneven wedges [soak in water before frying]
1 piece [3"x3"] salted fish fillet/meat - wash and soak for 10 minutes, cut into 1 cm wide strips
1 tbsp chopped garlic
1/2 tbsp chilli paste
salt to taste
2 tbsp oil
100 ml water


  1. Heat oil in wok [medium heat] to fry salted fish till fragrant.  Push aside and add in chopped garlic and chill paste.  Saute till fragrant, then add in brinjal [discard water use to soak brinjal].  Stir fry to combine ingredients well.
  2. Add in water, stir and cover to cook brinjal till soft.  Add salt to taste.  Dish out on plate to serve.  Garnish with spring onions or coriander leaves
