WHITE BITTERGOURD [ 白玉苦瓜 ] WITH CHICKEN SOUP

Another home grown white bitter gourd [one variety from Taiwan] from a friend. This specie is grown from AA Apple White Bitter Gourd seeds. Fresh from the garden and not over ripe, it is slightly bitter than when is fully ripe. The bitterness is acceptable with the white pith removed.

A quick and easy to cook clear soup that is nutritious and delicious. Dip the chicken pieces in soya sauce with some cut small chillies, is simple awesome.
Ingredients
[serves 2-3]
4-5 chicken wings [halved] or any parts of chicken - blanched
300 gm white bitter gourd - halved, seeds and white pith removed
900ml - 1 litre water
a few slices of ginger
salt and chicken stock granules to taste
dash of pepper
some spring onions for garnishing
  1. Bring water to boil in a soup pot or claypot with ginger.  Add in blanched chicken pieces and boil until almost cooked.
  2. Cut bitter gourd into slices and add in some salt.  Mix and leave for a few minutes, then rinsed.
  3. Add bitter gourd to chicken soup to cook for about 5-10 minutes [depending on whether you prefer it to be crunchy or soft].  
  4. Add seasoning to taste.
  5. Before serving add pepper and spring onions.
  6. Serve hot.
