This is another great recipe which you can try when time is a constraint to prepare a complete meal but you just prefer to eat in. I prepared this for a One Dish Meal for 2 but ends up it is enough for 3.
It is so tasty delicious serving with steaming hot rice and some sliced cucumbers. Picture below illustrate what I said.
The chicken pieces are succulent and super delicious, not too savoury [no salt added]. It is just perfect chicken and mushroom dish.
Recipe adapted from Spice N Pans Youtube Video with modifications
2 chicken thighs [medium or large] - skinned and cut into bite size pieces
3 dried mushrooms - soaked and sliced slantwise to get thin broad pieces
1 stalk of spring onions - cut into sections and some chopped
some chopped ginger and garlic and spring onions
1 tbsp each sesame seed oil, cooking wine, light soy sauce and dark soy sauce
2 tbsp oyster sauce
1/2 tsp sugar
1/4 tsp pepper
2 tsp cornflour
- Marinate chicken pieces with seasoning. Mix well and leave for at least an hour or more.
- Transfer to steaming plate, place in steaming tray and steam over high heat for 20 minutes or cooked through.
- Remove and serve with rice. Sprinkle some chopped spring onions.
