This is a simple and homey soup that is quick and easy to prepare. It is also a tasty and healthy soup that is good for the young and old.
I love to enjoy the Buddha's gourd that looks bright greenish in colour, so do not over boil it. Also known as Chayote, eating it has several benefits such as:

1 medium size Chayote [Buddha's Gourd] - halved, seed removed, cut into wedges
1/2 red carrot - peeled and cut wedges
1 large chicken whole leg - skin removed and cut bite size pieces
800 ml water
3 pips garlic
salt, chicken stock granules and pepper to taste
- Bring water to boil in a soup pot or claypot. Add in all the ingredients.
- Bring to boil for several minutes, then reduce to low heat and simmer for 15 minutes.
- Add seasoning to taste.
- Serve hot.
